Intro to Disznoko 5 Puttonyos Tokaji –

Disznoko 5 Puttonyos Tokaji  is brilliant gold in colour.  There are many fruits (peach, apricot, plum, citrus) on the nose with honey and wild flowers. Pear, grapefruit, almond and a touch of vanilla in the mouth. Rich with fresh but rounded acidity; lighter, silky and creamy structure and very good length. Pure and precise with lovely richness.

Full tasting note and wine making –

Acclaimed as one of the most favourable sites for Aszú in Tokaj, the Disznókő estate is a single tract of land of 104 hectares, planted with noble grape varieties of the Tokaj Wine Region, mainly Furmint. All the grapes on the cluster develop at a different rate, so the aszú grapes are picked one by one, each by hand. Our skilled harvesters pass through the whole estate two to four times to catch each aszú berry at its optimal state. This incredibly time-consuming selection method guarantees the best quality for our wines. Aszú harvesting is possibly the most labour-intensive harvest in the world – harvesters can pick a mere 6-10kg a day.

The aszú berries are so dry it is impossible to press them directly. Instead skin contact is used; aszú berries are soaked in fermenting must for 12 to 60 hours to extract the sugars, flavours and acids. The must is pumped over to increase skin contact. To finish the maceration we draw off the juice from the aszú berries leaving behind a paste. This paste is then slowly pressed (for up to 6-7 hours). The pressed juice is added back to the fermenting wine and allowed to ferment until the wine reaches the desired balance. The wine is then aged in barrel for two years.

The producer –

Dating back to 1413 on the land registry and ranked as a Tokaji first growth from 1732, Disznókő is known for producing top Tokaji. From years of dedication, the winery has crafted its own style of Tokaji wines – the legendary sweet white wines of Hungary.

Driven by a passion for the purity of the fruit, freshness of the grape varieties and the complexity of the Botrytis, Disznókő has created a portfolio of utterly delicious wines. A well-deserved standout in any desserts wines range.
