Intro to Les Volets Chardonnay –
Les Volets Chardonnay from Vallee de l’Aude in the Languedoc in France is a fresh, flavoursome southern French Chardonnay in a Burgundian style. There are cream and honey notes on the nose with balancing underlying acidity that ensures longevity and elegance.
Full tasting note and wine making –
Les Volets Chardonnay IGP Haute Vallee de l’Aude France has delicate golden green hues that dance in the glass as it swirls in the sunlight. The nose is aromatic with candied fruit, apricots and orange peel that give way to toasted hazelnut and buttery brioche. This reveals the secret of the quality Chardonnays from this area – nothing overpowering, but the gentle oak touch is there. On the palate this wine is harmonious. The smooth, slightly nutty character leads to appealing gingerbread /tea cake flavours. This is a wine with great balance with underlying acidity that ensures longevity and elegance whilst the intense, opulent flavours fill the mouth without being clumsy or heavy. It is made from mostly hand-picked grapes and 20% has been vinified in old oak that imparts texture and body.
The producer –
Sourced from the lesser-beaten territory of Pays Cathare that surround the towns of Carcassonne and Limoux. The beautiful rugged environment with its argilo-calcaire sub strata is home to the AOP Languedoc and Limoux, but the vineyards do not stop with the AOP geographical limits and it is from these outskirts that we have sourced some exceptionally interesting wines. One of the great advantages of the region is that fact that it benefits from enviable geographic and climatic conditions allying the warm Mediterranean sunshine which is tempered by the altitude and the cooler nights so characteristic of the foothills of the Pyrenees. These are ideal conditions allowing for the longer, slower ripening of the grapes, thereby providing a superb base for the elaboration of wines that offer intensity, complexity and finesse. The traditional noble grape varieties of Chardonnay and Pinot Noir have a natural affinity here in the Haute Vallée de l’Aude, as does the less widespread Malbec (originally known in France as Cot).
Drink with –
This is ideal with rounded mouthfilling textured food such as baked chicken with a creamy sauce, wild mushroom risotto or pasta with clams in white wine.
