Lemon Refrigerator Pudding
Ingredients
- Cream for decoration
- 125g cup icing sugar
- 56 tbs butter
- 4 separated eggs
- 1 packet trifle sponges - cut in half and spread with lemon curd
- 1 lemon - rind grated and juice together
Instructions
Step 1
Sift sugar, add butter and the cream the mix, add the lemon Juice and rind, mix in.Step 2
Stir in the egg yolks, and then fold in the stiff beaten eggs whites.Step 3
Line a dish with sponges with lemon curd on the inner side.Step 4
Cover with mixture and top with layer of sponges. Place in the fridge for a minimum I hour or overnight.Step 5
Top with whipped cream when ready to serve.
